About JERUSALEM ARTICHOKE: Jerusalem artichokes, also called sunchokes, aren't like regular artichokes. These root vegetables have a taste that's similar to water chestnuts, and you can eat them raw or cooked. If you eat them cooked, they have a creamy texture and you can use them in ways similar to potatoes.

Jerusalem artichokes provide a number of vitamins and minerals and may provide some health benefits because of their role as a prebiotic. The benefits of the Jerusalem Artichoke are well known throughout the world, for its ability to significantly lower blood sugar levels and stabilize them, for the natural significance of the tea with no side effects like that of modern medicines. The artichoke contains about 10% protein, no oil, and a surprising lack of starch. However, it is rich in the carbohydrate inulin(76%), which is a polymer of the monosaccharide fructose. Tubers that are stored for any length of time will digest their inulin into its component fructose. Jerusalem Artichokes have an underlying sweet taste because of the fructose, which is about one and a half times sweeter than sucrose.
