"A light, refreshing and tempting summer dessert with wonderfully fragrant raspberry powder. Did you know that 1 teaspoon of raspberry powder is equivalent to 100 g of fresh berries? So, while you still have to wait for fresh berries, I invite you to enjoy raspberry powder with a lot of vitamins, minerals and antioxidants." - Inga from Mamos restoranas
Ingredients:
For baskets:
- 100 g of whole grain oatmeal
- 2 small very ripe bananas
- 1 teaspoon of vanilla
For the cottage cheese cream:
- 100 g of curd
- 50 g of Greek yogurt
- 1 tablespoon of maple syrup
- 1 teaspoon of raspberry powder
Add your favorite berries or fruits.
Adjust the sweetness of both the baskets and the curd to your liking - if you want more sweetness, add a little maple or agave syrup.
Preparing:
- First, we mash the bananas with a fork, mix in vanilla and oatmeal.
- Grease the cupcake molds with oil, use a spoon to form baskets. This amount makes 6 baskets.
- Place in an oven heated to 180 degrees C and bake for about 15 minutes.
- After removing from the oven, let it cool for 10-15 minutes and only then remove the baskets from the cupcake molds with a spatula.
- Blend the ingredients for the curd until smooth.
- Allow the baskets to cool completely and only then fill them with curd cream and berries.
